Strawberry Cheesecake Blender Muffins

Strawberry Cheesecake Blender Muffins
Yields 12
Ingredients
  1. 2 1/2 cups oats
  2. 1/2 cup yogurt
  3. 2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/4 cup milk
  6. 1/2 cup strawberry puree*
  7. 1 egg
  8. 1 1/2 tsp vanilla extract
  9. 2/3 cup coconut sugar
  10. 1/4 tsp salt
  11. 3 tbsp ghee, softened
  12. 1 cup diced strawberries

  13. For the filling
  14. 4 oz. organic cream cheese at room temp
  15. 1/2 tsp lemon juice
  16. 1 tsp vanilla extract
  17. 3 tsp honey
Instructions
Preheat the oven to 375 degrees F
  1. In a small bowl mix together the filling ingredients until smooth and creamy, set aside
  2. In a high speed blender mix all muffin ingredients besides diced strawberries, making sure to blend the oats in last
  3. Pour into a large bowl, add diced strawberries and mix by hand until evenly distributed
  4. Line a muffin tin with silicone liners or foil liners (with no paper only the foil)
  5. Using a small cookie scoop or spoon, layer a small amount of batter, filling about 1/3
  6. Scoop 1 tsp of filling into the center of each muffin then top with remaining batter
  7. Bake muffins for 25-27 minutes
  8. Cool completely before removing from liners
Notes
To make the strawberry puree, simply blend strawberries in a high speed blender until liquid and smooth
